Hi, I’m Zuzanna

I’m an environmental nutritionist-turned-social entrepreneur because our planet needs action. Well thought through, with a long-term strategy and one that addresses the roots of the problem.

For me, it all starts with the soil, leading to a food system, ending with the healthcare system.

My passion for action lies at the crossroads of farming, nutrition, healthcare, and new ways to fund positive change in a fair, sustainable way for all.

Connecting Grounds : Upcycling coffee waste into novel food

I started Connecting Grounds in my 2nd year of my bachelor's degree. The idea of working with coffee grounds was born from my study job - a barista, and volunteering at the care farm - a community garden for people wiht disabilities. What started as a coffee composting project became a student-led company that upcycles coffee waste into a novel food product. We collaborate with Lavazza and several other key players in Denmark's coffee and food industry.

RHEA : Accelerating Nutrient Density in Europe

RHEA was born of a gap in the European non-profit landscape at the intersection of nutrition, health, and farming. It was funded by three nutriotsnits, working in this intersection. We have created the world’s biggest database of nutrient density. We run local reserach and educational projects in Southern Europe as well as Europe-wide research and advocacy work.

HarvestCare : Building an Agri-Health System

Founder, Est. 2022

HarvestCare is a Dutch-based non-profit organisation translating the Food is Medicine models created by Tufts University and supported by the Rockefeller Foundation, among others, into the European and Dutch context. We have proposed a first European Food Pharmacy Randomised Control trial, in which diabetes type 3 patinets with low income have received free organic local food boxes and a lifestyle program.

In 2024, we were awarded EIP funds to lead the creation of the Agri-Health Impact Bond. Innovative financial model in which the positive outcomes provided by food pharmacy and local regenerative farmers are being paid by public bodies, after initial support from impact investors.

Our aim is to make regenerative agriculture accessible to all, especially those who need it most, while creating new institutional income streams for the farmers who care for our soils.

1st Regenerative Healthcare Conference

I had the honour of being the only European invited to this first global conference, where healthcare professionals explored the connection between soil and human health.

One Health for All, All of One Health

Handed out the One Health Manifesto - signed by 150 farmers, nutritionists, veterinarians, and medical doctors - urging DG AGRI and other DGs to place One Health with a focus on regenerative agriculture and nutrition.

Symposium: Soil as a basis of healthcare

A HarvestCare symposium supported by De Tuin Van Holland and the Province of South Holland. It brought together 160+ participants to explore how farming practices shape nutritional quality, and how food system access relates to the chronic disease epidemic
